Stefani Estate's early harvest Frantoio comes from olives picked at a 60% green to 40% black colour ratio in groves surrounding their Yarra Valley vineyards, typically from late April to mid May. The fruit is cold extracted to yield a low volume of oil that is immediately settled in vacuum sealed stainless steel tanks, producing an extra virgin oil with 0.12% oleic acid verified by Modern Olives. It shows green cut grass and artichoke notes with a peppery finish.
