Rio Vista's mono-cultivar Nevadillo olives are 100% South Australian grown and cold-extracted soon after the 2026 harvest, processed quickly to preserve aroma and flavour. The oil presents a balanced expression of fresh olive fruit with aromas of tomato vine, fig and summer fruit, leading to gentle bitterness and a peppery finish. It is distinctive enough for finishing but mild enough for everyday cooking.
