Made solely from Arbequina olives grown near Elvas in Portugal's Alto Alentejo, this oil is harvested by hand with vibrators in October and November when the fruit reaches the 'three colours' stage, then cold-extracted with minimal delay. It shows a fruity, sweet character with a smooth buttery finish. The producer suggests it works well with soups, vegetables and mild fish, either raw or in warm dishes.
