"The aroma opens with green almond, followed by a subtle note of freshly cut grass and a delicate floral character of freshly bloomed jasmine. On the palate, the oil is robust, with pronounced bitterness and strong pungency. The peppery sensation builds noticeably at the back of the throat, giving the oil structure and intensity. As that intensity settles, the floral character becomes more apparent, carrying through into a long, persistent finish. The jasmine-like freshness lingers through both the mouth and retronasal aroma without becoming sweet or cloying. The mouthfeel remains quite clean, giving the oil a soft finish despite its robust bitterness and pungency. Overall impression: A distinctive, robust extra virgin olive oil led by green almond, firm bitterness and pungency, with subtle fresh-cut grass and an elegant note of freshly bloomed jasmine that persists through a clean, lingering finish."
