Dimitri's Agoureleo is pressed early in the season from hand harvested still-green olives on their 200+ year old groves along the Mediterranean coast. The unfiltered oil is separated from the main harvest - Dimitri markets this oil for its medicinal properties on account of the extremely high polyphenol levels (yet to be confirmed by OlioWise). Dimitri suggests a daily teaspoon before breakfast. Its robust flavour is from the early harvest and minimal processing.
