Chiavalon's Ex Albis blends five Istrian varieties (Buža, Crnica, Istarska Bjelica, Rožinjola and Moražola) grown near Vodnjan at 80 to 180 metres altitude. The olives are harvested in October by hand and pneumatic rakes, then cold extracted within hours at below 24°C. The oil shows an intense green hue with aromas of wild chicory, green apple, artichoke and fresh cut grass, layered with mint, rosemary, sage and almond, finishing with balanced bitterness and peppery pungency.
