Capay Valley Olive's Coratina is a robust, high-phenolic oil from the November 2025 harvest, grown on the farm in the Capay Valley and milled at Chacewater. The producer describes fresh-cut grass, green almond and artichoke aromas, pronounced bitterness and a building peppery finish. It won Gold and Best of Class at the 2026 California State Fair.
