Made exclusively from the shy bearing Nocellara del Belice olives, harvested early just as the fruit begins turning light straw yellow-green and may show a light rose-coloured blush. The early harvest yields an vibrantly fruity, green herbaceous aroma redolent of green tomato and artichoke, followed by a fresh bitter taste and a persistent pepperiness reminiscent of green capsaicin/capsicum.
